||Altitude: 300-500 m. a.s.l.
||Traditional, hand-picking in crates.
||Soft pressing of the whole grapes to obtain and ferment only 40% of the must at a controlled temperature. Aging in steel tanks until spring on its own yeasts.
||Blending of the cuvée using, together with the vintage wines, a good 25% of wines from old vintages aged in magnums to give complexity and uniqueness. Draught with selected yeasts in the winery and aging in bottle for at least 30 months. Disgorgement and a further 2 months of evolution before release.
||This is an excellent aperitif and accompanies all kinds of entrees.
