Trinidad and Tobago has always been an important land for the cultivation of sugar cane, thanks to the particular conformation of the territory, even if in principle it has kept the production of rum as a marginal activity. At the end of the 18th century, under the British government, the first notable quantities of rum began to move, traveling to England where they mix with other qualities of distilled rums from the Crown British (Barbados, Demerara, Jamaica) and thus give life to Navy Rum. In the world of spirits, the quality of the rum of Trinidad and Tobago marks the story. An island state whose name was given by Columbus, a tribute to the trinity, while the second name most likely comes from the cigar form of the smaller island: and what's better than a good cigar with a good rum? In the nineteenth century, the Siegert family moved the Angostura Bitters factory to the port of Spain. Where would today's bartenders be around the world without the existence of a Prussian family whose mission was simply to limit the effects of high fever on Simon Bolivar's troops? After the First World War, Robert Siegert, the founder's grandson, begins his research on the rum industry: founding a distillery that stands out from the others in the region. It is a modern distillery, fruit of careful scientific research, in possession of several distillation columns that replace the traditional stills. Today the rum produced in Trinidad and Tobago accompanies the great celebrations of tradition and secular culture, especially during the Carnival, an important event, celebrated by the population in an intense way and also by tourists from all over the world.

History
Administered by Britain as a single territory since 1888, the two islands between 1958 and 1961 formed part of the West Indies Federation. The domestic political life was forty years characterized by the dominance of the moderate People's National Movement (PNM), expression above all of the middle classes of African origin, founded in 1956 by E. Williams (uninterruptedly head of government until his death, in 1981). The PNM led the country to independence (August 31, 1962), then promoted its transformation into a republic within the Commonwealth (1976). In the 1986 elections a coalition of opposition parties prevailed, the National Alliance for Reconstruction (NAR), whose leader, A.N. Robinson assumed the leadership of the government, but in 1991 the PNM returned to the government. In the 1990s the persistence of a serious economic situation and the maintenance of austerity policy by the government fueled a strong social protest. In 1995, after the early elections, a progressive coalition government was formed, the result of the alliance between the United National Congress (UNC) and the NAR.

Caroni rum is golden in color and has a powerful aroma. Aged totally in the Caribbean, slightly younger than vintage and then lowered to 52% for a perfect balance of rum. The nose is enveloping and elegant with notes of exotic fruit and oriental spices. In the mouth it is warm and silky. An extraordinary rum whose aroma is composed of the scent of chocolate, citrus and sweet spices, accompanied during the oxygenation by notes of toasted wood, tobacco leaf and candied fruit; in the background a balanced and wonderful note of sherry. The aromatic explosion on the palate reveals notes of oriental spices and a subtle citric note that is accompanied by a good presence of sherry, cocoa and tobacco.

The Caribbean cuisine is characterized by a variety of dishes and gastronomic styles from all over the world. Rice and black beans accompany many traditional dishes. The island cuisine is characterized by a great use of fruit (mango, papaya, avocado, etc.) used in dishes and side dishes. Chicken, pork, mutton, fish and crustaceans dominate the main dishes.
