 The history of rum is inextricably linked to the history of sugar cane production on the island of Martinique and the rest of the Antilles, which occurred during the nineteenth century. After being initially employed by the Chinese and then introduced into the New World from Colombo, in the second half of the century sugar cane plantations had exceeded half of the entire cultivated area of ​​Martinique, supplanting all other crops in importance and breadth and thriving particularly in the humid climate and warm of the island.
 Because the agricultural rum of Martinique is the purest and most controlled variant of all rum types, its production follows very precise and very strict rules. The juice of sugar cane (and not molasses, as in industrial rum) must be fermented and then distilled, and then left to mature. / b> in wooden barrels. Martinique is one of the Lesser Antilles with a healthier climate: the average annual temperatures oscillate around 26 ° C in the less elevated areas, and the rains (abundant from May to July) favor the development of lush forests. History
Reached by C. Colombo in its fourth journey (1502), but neglected by the Spaniards, the island was colonized by the French from 1635. Possession of the West India Company (1664), then the crown from 1674, was attacked several times from the English, who occupied it in 1762-63, in 1793-1802 and in 1809-14. Overseas department since March 1946, Martinique has seen the affirmation, since the 1950s, of the nationalist and leftist forces, which claim greater autonomy; there is also no lack of independence.

It is a cuisine rich in flavors but very light in its delicious simplicity: in fact almost all dishes are composed of unique dishes of meat or fish accompanied by white rice, vegetables, sweet potatoes and bananas. In particular, fish and shellfish are the basis of local cuisine: you can enjoy excellent slices of tuna, daurades or thazard, vivaneaux, octopus, lambi, seafood, shrimp, lobster and crab.
