The wine of the Golan Heights is produced in the Israeli settlement of the Golan Heights, in the town of Katzrin. The area has an ancient history: in the Bible we find the first signs of the production of wine in this area, with a moderate consumption by the local population. The territory of the Golan, rich in mountain ranges and volcanic rocks, has a temperate climate: warm and windy in summer and cold in winter. The thermal excursions can also be quite abrupt: the nights are always fresh and the days are warmer; this favors the growth of particularly fragrant and sapid vines.
 The soil is volcanic in the eastern part, while it is rich in basaltic rocks in the western part: the calcareous bases give the vine an intense and persistent olfactory note.
The most widespread vines are vines bordolesi, grenache and mourvedrè, which give wines of decisive quality and quite tannic flavor .
Many wines from the Golan area are produced according to the kosher principles: the production of wine is 40 million bottles a year, but individual consumption is limited to 7 liters per person per year.
Vinification in Israel has similar characteristics to the French one, with predominantly aged red wines and white wines in steel barrels, mostly coming from monovitigno. The Israeli cuisine offers special and spicy dishes: the tannic aroma and full of wines from the heights of the Golan enhances the sweet and sour notes. A good plate of hummus will therefore be able to marry perfectly with a Judaic red aged in wooden barrels, while a spicy meat dish can be enhanced by the full flavor of red.

Climate and soil Mount Golan, 1000-1200 meters, with its cool climate and its volcanic soils has long been the best district for Israeli viticulture. There are also vineyards around the city of Haifa, on the slopes of the hills of Carmelo, on the plains between the sea and Harey Yehuda, on the Western Bench, around Jerusalem and even south, in the Negev desert.
History In Israel, in the promised land where honey and milk flowed, viticulture and wine have always been of great importance. The grapes were part of the seven blessed fruits of the Fifth Book of Moses and viticulture has always been favored by both Jews and Christians. But the Arab conquests of Palestine in the 1600s led to the destruction of the vineyards and only towards the end of the 1800s, the immigrant Jews planted new vineyards, thanks to the donations of Baron Edmond de Rothschild of Château Lafitte. The choice of variety fell on South African vines, being very suitable for the climate, and the wine industry flourished, thanks to the great demand for Koscher wines in Europe and the United States.
Typical products The vines that are currently most cultivated are: Carignan, Graenache, Alicante, Bouchet, Sémillon, Chenin Blanc, Muscat of Alexandria, but in the cooler areas there are also new plantations of Cabernet Sauvignon, Merlot, Sauvignon Blanc, Chardonnay and Riesling. Unfortunately, it seems that the ambition of producers is to make Kosher wines rather than quality wines. Probably the Israeli winemakers will soon find the way to combine both needs.
Typical dishes Israeli cuisine is a contamination of flavors from different parts of the world. On the one hand there is a deep-rooted Jewish tradition, on the other a very strong influence of Arab cuisine. For the Jews, eating is a sacred act and the preparation of the dishes must respect hygienic-sanitary as well as aesthetic and religious standards. In particular, foods of animal origin are divided into permitted and prohibited, depending on the type of animal and the methods of slaughter. In addition, meat and its derivatives can not be mixed with milk and its derivatives, so all the material used for cooking, serving and eating meat must be different from the material used for dairy products, as well as stored in different places. Fermented beverages are forbidden, with the exception of wine, which must however be produced respecting a rigorous production and certification system.
