The label, inspired by the figure of Harlequin, depicts the mask, the tear running down his face, and the tomato stains on his costume.

Colour

Brilliant, dense ruby red, tending to garnet with ageing. Dense, with a high content of glycerine.

Bouquet

Mix of fruit, blossoms, and minerality, with well-defined feeling of volume and detail.

Flavour

This wine gives a sensation of enveloping richness and complexity. Fruit, spices and higher alcohols alternate with flavours of fruit jam and forest floor. Tobacco, cinnamon, nutmeg, cloves touch and its minerality enhance its flavour. It has a persistent and persuasive sweetness. It differs from Kairos in a more detailed flavour.

Pairing

Elaborate dishes of all meats with robust and spicy sauces. Excellent with aged and full-flavoured cheeses and game. This wine can be sipped at the end of a meal or alone.

Soil composition Alluvial, volcanic or glacial according to the location of the vineyard.
Vinification The whole clusters are crushed without destemming, and the grapes ferment in concrete vats with ambient yeasts for about 30 days. Pump-overs and délestages follow the vinification. The company also performs visual, smell and hearing inspections. The drawing-off is performed, and maceration lasts 10 days.
Ageing A two-fold maturation process follows, for a total of 30 months, with new French oak 225-litre barrels (200%), with no rackings. The unfiltered wine is bottled and receives an additional minimum 2-years ageing in bottle. Harlequin is produced only in the finest growing.
