||September 12, the grapes are stored in boxes for a short period of withering.
||Grapes harvested by hand arrive in the cellar where it is pressed; is pumped into the vats to carry out fermentation in red. After a dozen days it is pulled down and, kept warm, makes malolactic fermentation for natural dehydration. Rests for twenty-four months in small 225 liter barrels; stop for another six months in steel to mix the single barrels and then finally bottled.
||Bottled in the summer, resting for another six months in the bottle, it is then put on sale.
