Quality Soil and Techniques

The vineyards, cultivated on clay and limestone soils with alluvial pebbles known as 'graves', impart a precious mineral essence to the wine. The grapes, harvested in a state of over-ripeness, are carefully selected. The practice of scalar harvesting involves several passages between the rows over a period of weeks to ensure optimal ripeness. In the cellar, the Sémillon, Sauvignon and sometimes Muscadelle grapes are gently pressed to obtain a soft and sumptuous must. Fermentation takes place in steel or barriques, preserving residual sugar and protecting against oxidation by adding sulphites. Fermentation, which is long and complex due to the high concentration of sugars, takes a long time, sometimes up to a year. After ageing in barrels of 1 or 2 years, the wines have extraordinary ageing potential.
