Origin |
The vineyards are located in the towns of Lonato, Peschiera del Garda, Desenzano del Garda and Sirmione, along the southern shore of Lake Garda, on the border between Veneto and Lombardy regions. This area was formerly occupied by the Lugana forest, characterised by an important presence of white and black clays. |
Harvest |
End of September, beginning of October. |
Vinification |
The vinification processes are aimed to exalt floral, fruity and mineral characteristics that are typical of the grape variety and of the zone of origin. The must is then cold-macerated, pressing is soft and fermentation is carried out at a controlled temperature of between 16 and 18°C. |
Ageing |
In stainless steel with a further period of bottle ageing before marketing. |
Pairing |
Ideal as aperitif. It pairs well with cold cuts as well as with sushi and oriental dishes, even particularly spicy. In the Lake of Garda, it has always been served with the local cuisine based on fish from the lake but it is also perfect with salt-water fish, both in less complex dishes and more elaborate recipes. |
