Cultivation system	Double cordon and Guyot.
No. plants per hectare	4,500 - 5,000 per hectare.
Harvest	By hand, in September. The grapes are harvested when perfectly ripe and in the cooler hours of the morning. They soon reach the winery where the whole grapes are softly pressed.
Vinification	After an initial racking, the first must is pumped into temperature-controlled vats for fermentation.
Ageing	The wine is kept on its lees for at least 8 months before bottling, and 8-9 months after harvest.
Allergens	Contains sulphites
Pairing	Fish courses, shellfish dishes, cheeses. It is an excellent pairing with vegetarian and ethnic recipes.
