| Vinification |
The grapes are separated from the stalks, left to ferment, and then macerate for about 15 days. |
| Ageing |
After drawing-off, the wine is aged for 12 months in oak barrels, then for 3 months in the bottle. |

It pairs with Chinese dishes with ginger and Sichuan pepper, Indian dishes rich in spices, dishes with chili, and cured meats. |
