Vinification |
The late-harvested grapes are subjected to a brief period of drying, using the traditional technique employed in the Province of Verona. Maceration takes place on the skins for 10-14 days at a controlled temperature, to let the aromas of ripe fruit to be fully extracted. |
Ageing |
In 700-litre cherry wood casks and tonneaux. Ageing in the bottle. |
Pairing |
This is a vigorous and powerful wine that pairs well with meat dishes: roasts, grilled red meat, lamb, and game. It is also excellent with aged cheeses. |
