Vinification |
The Garganega and Sauvignon Blanc grapes are harvested separately. The Garganega grapes undergo over-ripening in plateaux in order to obtain greater sugar concentration. After crushing and soft pressing of the grapes, the must is fermented at a controlled temperature in steel tanks and then completed in French Allier oak barrels, in which part of the malolactic fermentation takes place, increasing the wine's softness. |
Ageing |
In oak casks and further maturation in bottle prior to marketing. |
Pairing |
It pairs with all fish dishes. It is excellent with vegetable-based dishes, and makes a perfect pairing with asparagus. It may also be served with grilled white meats and with mid-aged cheeses. |
