Harvest By hand.
Vinification Maceration on the skins is followed by fermentation, which takes place at a controlled temperature in small to medium-sized stainless steel vats for about 7-10 days with frequent pumping over. Malolactic fermentation occurs naturally.
Ageing 5 years of which 36 months in oak casks of 25 - 50 hl. Followed by 6 months in bottle.
