History	The name and origins of the Greco grape variety derive from the Aminee Gemine vines, mentioned in ancient times by authors Columella, Virgil and Pliny.

Soil composition	Medium clay-limestone mixture with volcanic sandstone.
Yield per hectare	10,000-14,000 kg/hectare.
Fermentation temperature	13-15 °C
Vinification	After carefully selecting the grapes in the vineyards, they are delivered to the winery where they undergo soft crushing and destemming and the addition of dry ice for initial temperature control. This is followed by fermentation at a controlled temperature of 13-15°C.
Ageing	In stainless steel at a controlled temperature.
