Harvest The grapes were picked and de-stemmed between 6th and 9th September.
Fermentation temperature 11-12 °C
Vinification The must was then le on the skins for 18 to 24 hours at a temperature of 11-12 °C in tanks specially designed to protect it from oxygen by using recycled carbon dioxide from the first fermentaon, thus reducing levels of anoxidants
Ageing Subsequently 40% of the must fermented and aged on the lees for six months in 20 hl and 27 hl oak barrels and the rest in stainless steel vats. The wine was then assembled and boled at the full moons between the end of March and April.
Total acidity 5.10 gr/L
Allergens Contains sulphites
