The reason for this variety shares the name with the famous cheese of the same name remains unclear, but may relate to the seasonal movements of pastoralists and their herds, which traditionally occur in regions where exactly is the Pecorino grape. Harvest Hand-harvested in the early morning or late afternoon, in small boxes placed before arriving in the cellar, in cold storage.
Vinification The selection of grapes harvested in mid-September is very scrupulous, soft pressing is followed by an immediate drop in temperature to facilitate the decanting and removing turbid suspension. The fermentation is always carried out at controlled temperature (14-15 °C) in steel tanks. All the time of refinement in steel (up to around February), the wine is now at a temperature of about 10 °C to maintain the aromatic properties.
