Harvest |
End of September - beginning of October, grapes are hand-picked and only the best part of the bunch is kept for raisining on screens under condition of temperature and humidity control. |
Vinification |
Beginning of January. The grapes are crushed and fermented in conical tanks at 14º C, with daily plungings. |
Ageing |
In barrels /l arge vats for 33/36 months. It is aged for further 12 months in the bottle, before release. |
