Production technique |
After a rigorous selection of the grapes, part of the Pinot Noir remains a few days in contact with its skins to take on colour. The blend between the Chardonnay and Pinot Noir, vinified in steel tanks, is made shortly before bottling. |
Vinification |
Following lees ageing in spring, it spends a period of more than 30 months on the lees. After disgorgement, at least 6 months elapse before marketing. |

It pairs with all courses, but not with desserts. |
