Climate Altitude: 700-750 m. a.s.l. Exposure: northern slope of Mount Etna.
Soil composition Volcanic, medium deep, with a mix of volcanic ashes and pebbles.
Cultivation system Head-training system with a single pole.
Harvest Second decade of October.
Fermentation temperature 28-30 °C
Vinification Alcoholic fermentation under controlled temperature between 28-30°C.
Ageing Spontaneous malolactic fermentation and ageing in French oak barriques, tonneaux, and big barrels made of 20% new wood. The wine is bottled after 16-18 months of ageing in wood and 1 month in steel.
Allergens Contains sulphites
