Origin Contrada Santo Spirito, town of Castiglione di Sicilia (Catania).
Climate Altitude: 700-750 m. a.s.l. Exposition: northern slope of Mount Etna.
Soil composition Volcanic, deep, predominantly volcanic ash, very loose and dark.
Cultivation system Traditional "alberello" head-training.
Yield per hectare 6,000 kg/hectare.
Harvest Beginning of October.
Vinification Traditional white vinification with short cold maceration (8-10°C), soft pressing, static decantation and alcoholic fermentation in 5 and 10 hl French oak barrels.
Ageing Malolactic fermentation and ageing in French oak barriques for 10 months followed by ageing in bottle for 8 months.
Allergens Contains sulphites
Pairing Vegetable-based main courses, fish and meat courses.
