Harvest |
When the grapes are ripe, this particular technique called "cutting the branch" is used, which involves cutting the head into fruit so as to interrupt the flow of sap between roots and bunches. It is thanks to this particular and natural phenomenon of dehydration, which lasts from 7 to 10 days maximum, that the grapes undergo a slight drying that leads to a concentration of hints of ripe fruit and a softening of the tannins. |
Vinification |
The grapes harvested by hand, begin the winemaking process with cold maceration lasting 10 days, followed by fermentation alcoholic. |
Ageing |
In wood for 6 months in wood and 6 months in bottle. |
