Harvest	By hand, with small crates in the second decade of October.
Vinification	Separation of the stalks and gentle pressing to respect the integrity of the berries. Maceration in steel vat between 10 and 14 days with manual pumping over of the must. Fermentation is spontaneous, with indigenous yeasts.
Ageing	Before bottling, the wine rests for 12 months in cement tanks.
