Vinification |
Gentle pressing of whole clusters followed by clarification of the must by natural sedimentation. Slow fermentation at a controlled temperature in big oak barrels of 30 hl. |
Ageing |
Partial malolactic fermentation only for Pinot Bianco and Chardonnay grapes with ageing on the lees for 12 months in big wooden barrels. The blending occurs three months before bottling. |
Pairing |
Caviar, grilled salmon, or roasted tuna. It pairs well with meat, such as the typical Fiorentina steak or veal like "saltimbocca alla romana". It is also ideal with braised veal shank, aubergine parmigiana, or truffle fondue. |
