Vinification |
Destemming is followed by slow must fermentation at a controlled temperature and gentle agitation of the must in stainless steel tanks. |
Ageing |
Malolactic fermentation and ageing for 12 months, partly in large wooden barrels (30%) and partly in barriques (70%). One-third of new barrels are used for ageing in barriques. The blending occurs three months before bottling. |
Pairing |
It goes very well with roe deer back with apple and red wine puree and ricotta dumplings, suckling veal back with poppy seed, baked sirloin with herbs, mashed potatoes, and chestnut ragout. It also pairs with veal liver with butter and thyme, veal paillard with Mediterranean vegetables, or even barley or smoked venison with cranberry and horseradish sauce. |
