Vinification |
Destemming is followed by slow must fermentation at a controlled temperature and gentle agitation of the must in stainless steel tanks. |
Ageing |
Malolactic fermentation and ageing for 12 months partly in big wooden barrels (50%) and partly in barriques using one-third of new barrels (50%). The blending takes place three months before bottling. |
Pairing |
It pairs well with goat in olive oil and braised herbs with asparagus and wild vegetables, sliced beef on a bed of rocket, soup with hare, and lamb shank with spinaches. It is a good pairing also with aubergine parmigiana. |
