Vinification |
Grapes are sorted and chilled in the company's exclusive cooling tunnel with an immediate drop in temperature followed by skin-cold maceration and extraction of aromatic compounds. Destemming, cold maceration for 12 hours, pressing in an inert environment. The fermentation is slow at a controlled temperature of 11°C in temperature-controlled and inert tanks. |
Ageing |
3 months in stainless steel followed by refinement in the bottle. |
Pairing |
Excellent as an apéritif or with light cured meats: It pairs well with dishes like ham and melon, salt cod, boiled meats and white meats. |
