The grey-blue and red clays on the surface with speckled limestone and limestone conglomerates give rise to a soil that beckons the Sangiovese, revealing its tannic potential and structure with particular grace and elegance. A mosaic of influences and aromatic echoes that is completed by other vineyards on less impervious, sandy and more pebbly slopes that call upon the grapes typical of the great Bordeaux reds to interpret the terroir. |
Harvest |
Only the best Cabernet and Sangiovese grapes selected during the harvest are destined for the creation of Perpiero. |
Vinification |
Once fermentation is complete, the winOnce they have reached full phenolic maturity, the grapes are harvested and vinified separately through prolonged maceration at a controlled temperature in steel tanks. Frequent pressing ensures intense colour extraction, complexity and soft tannins. e is racked into the barrique cellar. |
Ageing |
Frequent pressing ensures intense colour extraction, complexity and soft tannins. Once fermentation is complete, the wine is racked into the barrique cellar. The Cabernet Sauvignon and Cabernet Franc are matured in modern French oak barriques, while the Sangiovese is aged in 15 hl barrels. After 12 months, our team of winemakers makes the final blend. The wine thus blended can finish its ageing in second-passage French barriques, where it remains for a further year. Once bottled, Perpiero rests in the bottle for 4 months before being released on the market. |
