Vinification	Spontaneous in concrete vats followed by fermentation with indigenous yeasts for about 13 days. The temperature is controlled and reaches a maximum of 28°C. Soft pump-overs are also carried out.
Ageing	In large, untoasted French oak casks for 24 months. Matured in bottle for at least 3 months.
