Vinification |
The selection of the grapes is manual and takes place on long sorting planes. By fall the grapes reach the oak truncated cone vats: without temperature management and without the addition of selected yeasts the must completes fermentation and remains in maceration on the skins for about a month. |
Ageing |
The wine evolves, on its fine lees, for 16 months in small barrels and tonneaux, all made of French oak. Refinement in the bottle follows. |
