Production technique |
Produced with grapes from old vines, the grapes are selected on three tables of choice, de-stemmed and conveyed in small wooden vats without pump, the first pressing is done with the feet, followed by punching or rarely replacements. |
Ageing |
It matures in French oak barrels, no more than a fifth new for 15/18 months. The transfer ports with compressed air or fall are very gentle and kept to the minimum number possible. Aging in bottle for one year before being sold. |

To pair with grilled meat, roasted meat, stewed meat and seasoned cheeses. |
