Biserno is our eponymous wine. A thought-provoking wine, Biserno reflects the excellent terroir and micro-climate of the coastal area of the Upper Maremma. Only the finest grapes are selected for the blend, resulting in a wine of depth, intensity, complexity, longevity and elegance.

Colour

Intense ruby red.

Bouquet

Fruity aroma with complex nuances of cherries, blueberries and dark plums, framed by peppery spices and cloves, with a note of tobacco closure.

Flavour

Intense and masterfully soft, enveloping and velvety with fine tannins and persistent and spicy closure.

Pairing

It combines beautifully with first and second courses of meat and game. Try it with lamb chops.

Harvest	All harvesting is done by hand into 15 kg crates. From mid September to early October.
Vinification	Grapes are strictly sorted on a vibrating belt at the cellar. They are then de-stemmed and soft crushed. Fermentation takes place in stainless steel vats for 3 to 4 weeks at 28°C. Malolactic fermentation takes place 80% in barriques and 20% in stainless steel.
Ageing	The wine is aged for 15 months in new French oak barriques. The wine is further aged for 12 months in the bottle before release.
