|Composition of the land
||Marl and sandstone flysch of Eocene origin. Locally known as “Ponca”.
||The grapes are harvested by hand and machine around the beginning of September and during the coolest hours of the day.
||After the harvest the grapes are pressed and then softly pressed. The must decants at a temperature of 8 °C for 24 hours, then follows alcoholic fermentation in steel containers at controlled temperature. At the end of this phase, the base wine is sent for refermentation in autoclave, which is completed in about 1 week.
||The sparkling wine remains in autoclaves for about 3 months, enriched with substances and aromas released by yeast lysis. The wine is then bottled in isobaric conditions to avoid the dispersion of carbon dioxide. Before being put on the market, the sparkling wine rests in the darkness and silence of our cellar.
||It is the ideal wine for an aperitif! It accompanies delicate fish hors d'oeuvres, perfect with fried vegetables.
