Vinification |
Integrated pest management with controlled environmental impact. Soft pressing, separation of the must from the skins and clarification. Followed by fermentation in stainless steel at a controlled temperature, followed by re-fermentation in autoclaves at 16-18 °C. |
Pairing |
Excellent as an aperitif but also throughout the meal. Particularly suitable for mixed hors d'oeuvres, sea and land. Recommended on fried vegetables. |
