The Zarate family's property is located in the heart of the Salnes valley, in Meano, in a 16th century palace rebuilt in the 18th century. It is home to centuries-old vineyards that express all the characteristics of the area. The tradition of Zarate began in 1707 and today, after seven generations, the family continues to take care of the vineyards, and making wine. Today's complex is 6.4 hectares divided into 11 separate plots, the soil where the vineyards grow is rather poor but very sunny. The main variety cultivated is Albarino, a variety that most of all represents the Salnes valley. Since 2000, Eulogio Pomares, an expert winemaker at Zarate, has been in charge of the vineyards, implementing environmentally friendly viticulture. Harvesting is made with manual selection, in order to vinify only the most mature and healthy parts that express the particularity of the terrune. The objective is to restore the soil to its original equilibrium, in order to This is why no herbicides or pesticides are used and treatments are kept to a minimum. However, today Eulogio does not renounce to technology, it has installed a control station in each of the plot which examines the plant's climate variables, once collected, the data are sent to an external control centre which, after analysing them, sends a message to Eulogio who thus knows which parts will be the best to choose to process the wine.
