The history of viticulture in Ibiza, with the consequent start of wine trading activities, has very ancient origins and dates back to the settlement of the Carthaginians in the 7th century BC. The modern history of the Can Maymò winery began in 1995, the year in which Antonio Costa took over the structure and refurbished it, extending it and equipping it with the latest technologies to make excellent vinifications. A small family-run bodega, located north of the island of Ibiza, in the village of Sant Mateu. Along with the renovation of the winery, Antonio Costa has wisely worked also on the vineyards, expanding the boundaries and gradually replacing the older vineyards, especially those of Monastrell and Malvasia. In the new vineyards, located in the area of ​​Santa Agnès, we can see the coexistence of different varieties: Moscatel for the production of white wines and Temparanillo, Merlot and Syrah for the production of reds. The harvest is always carried out manually and with extreme care, bunch by bunch, with the use of 18 kg crates, filled under the burning Iberian sun and hastily brought to the cellar to be cooled and processed in order to prevent any oxidation . In this bodega we know the raw material perfectly and we have great respect for it, an optimal prerequisite for achieving great results.
