History Selvapiana currently cultivates 6 hectares of vineyards. A unique area of rare beauty at the foot of the Apennines on the border between Tuscany and Emilia-Romagna regions. DOC Pomino Rosso is one of the smallest and most historic appellations of origin in Tuscany.
Origin Village of Pomino, Town of Rufina (Florence).
Climate Altitude: 350 m. a.s.l. Exposure: South, South-West.
Soil composition Clayey, "Galestro" layer.
Cultivation system Espalier with Guyot pruning.
No. plants per hectare 7,200.
Yield per hectare Between 5,000 and 7,000 kg/hectare for Merlot, Sangiovese and Cabernet Sauvignon grapes.
Harvest By hand.
Vinification In thermoregulated stainless steel tanks at 28°C. Spontaneous fermentation with natural yeasts. Frequent pumping-over and maceration for about 25 days.
Ageing Large French oak cask of 25 hl for Sangiovese; French oak barriques for Cabernet Sauvignon and Merlot.
