||The Cannonau vine thrives all over Sardinia but it is on the warm, sandy soils of the coast that it has found an exceptionally favourable environment. At Tenute Sella&Mosca, Cannonau is grown in the south-east quadrant and on other small plots that have been identified as particularly suitable for the variety.
||The grapes are very carefully crushed and destemmed before undergoing low temperature pre-fermentation skin contact to encourage the extraction of colour compounds and aroma precursors. Fermentation on the skins is mainly at a temperature of 25°C, which rises to 28–30°C at the end of the process.
