Fermentation period	Malolactic fermentation: immediately after alcoholic fermentation in oak barrels (500 l).
Production technique	Gentle softening in vertical stainless steel containers under the open sky for the first 10-12 days of alcoholic fermentation.
Vinification	Each type of wine is processed separately. After destemming and gentle pressing, the wine is sealed by carbon dioxide; then one more day of refinement. Alcoholic fermentation begins 24-36 hours later with wild yeasts.
