This Organic Prosecco Doc embodies quality, elegance and is a natural progression of the path which we undertook over 10 years ago to promote environmentally friendly wines and sustainable agricultural practices. These practices are also implemented in all stages of vinification, second fermentation, bottling and storage.

Perlage

Fine, delicate and persistent.

Colour

Pale straw-yellow with greenish hints.

Bouquet

Complex fruity fragrance, inviting and spacious, in particular white peach and apple with slight hints of ripe fruit and a fragrant slightly musky aromatic note.

Flavour

Harmonious, sapid, persistent, moderately alcoholic, with freshness and vivacity. It is very dry and closes with a pleasant mineral note.

Pairing

Perfect as an aperitif and also as a complete food wine. Ideal with molluscs, crustaceans and risottos. Excellent with sushi and sashimi.

Vinification Destemming and gentle pressing, white fermentation for 8-10 days in thermo-controlled stainless-steel tanks (16-18 °C), aging in stainless steel vats waiting for the sparkling process.
Ageing Second fermentation in pressurized tanks for about 30 days at controlled temperature between 14-16 °C, until reaching 6 bar of pressure; the mass is then cooled to halt the fermentation and is kept at a controlled temperature of 8-10 °C for 3 months, to encourage the natural refinement in contact with the yeast; at the end of this phase it follows filtration and isobaric bottling.
