||Manual harvesting of the lightly overripe grapes; destemming-crushing, pre-fermentative maceration at 8 °C for 24-48 hours. Thermo-controlled maceration and alcoholic fermentation with selected yeasts for about 10 days at 24-26 °C. Final racking with soft presses.
||Malolactic fermentation in stainless steel and subsequent stay in French and American oak barriques for 12 months.
||Robust first courses, red meat and game. Meditation wine.
