||Grape varieties used: mainly Chardonnay with native white grape varieties.
||The grapes are destemmed and left in cryomaceration for a few hours. The next phase is the gentle pressing of the marc followed by static cold decanting so that it happens naturally. The alcoholic fermentation takes place in French oak barriques.
||On yeasts in French oak barriques for 4 months, with weekly bâtonnage.
