Deep ruby with purple reflections.

Bouquet

The bouquet is intensely fruity and fragrant, with blueberry and currant notes prevailing at first approach, followed by spicy hints including nutmeg and cinnamon. The nose also perceives pleasant notes of tobacco and eucalyptus. The result is an elegant, complex and pleasantly strong bouquet.

Flavour

An important and elegant structure, with an almost perfect balance between its soft and hard components. The Merlot gives a pleasant softness that is balanced by tannins that are very present but equally integrated, all enveloped by an important acidic vein. The finish brings a very complex aftertaste with notes of black fruit, spices and coffee; the persistence is pleasantly long and tasty.

Pairing

This wine deserves a meal worthy of its richness and complexity. It can be perfectly paired with main courses of lamb or game. It is also excellent with duck or beef pâté.

Fermentation period 15 days.
Vinification Alcoholic fermentation, which took place separately for the two varieties, lasted about 15 days at an average temperature of 28°C in temperature-controlled stainless steel vats. This was followed by maceration on the skins for 15 days with frequent pumping over and punching-down.
Ageing Immediately after racking, the wine underwent malolactic fermentation in new and second-passage Allier and Tronçais barriques, aged for about 18 months. After blending the lots and a short rest, the wine was bottled and further refined in the bottle.
