Bouquet

The olfactory impact is intense and intriguing. The bouquet is complex, initially dominated by hints of ripe fruit, such as cherry, plum and small black berries, which then evolve into spicy notes, mint, sweet tobacco and subtle balsamic notes on the finish.

Flavour

On the palate, it is structured and harmonious. It is characterised by tannins of great finesse enhanced by a pleasant freshness and a texture in which each grape variety gives its distinctive trait. The finish is persistent, with an aftertaste of blackberry fruit and cocoa.

Pairing

Modus is a perfect wine to be enjoyed by itself or with a wide range of dishes such as steak, pasta with meat sauce or ossobuco.

History SuperTuscan Modus is the contemporary expression of Tuscany. First produced in 1997, Modus immediately gained recognition from the most essential wine experts. Sangiovese is the primary varietal in Modus, giving the wine scents of cherry and ripe red fruits. Merlot gives roundness and freshness, enriching the taste notes of blackberry, while Cabernet Sauvignon lends structure and elegance. A wind rose is depicted on the Modus label, telling of the balance of all the elements necessary for the birth of a great wine: the vines, the sun, the fruit, the soil, human work and the passage of time.
Origin From the company's vineyards Poggio Casciano and Santedame. Altitude: 290-350 m. a.s.l.
Climate Variable from zone to zone. The climate has good temperature fluctuations between day and night which, especially during the summer, favour grape colour and aromas.
Soil composition Hilly soils tending to a loamy-clayey and clayey-silty, rich in skeleton, poorly fertile and shallow.

Harvest Ruffino Modus is made with carefully selected, hand-harvested grapes from Ruffino’s estates. Usually from the last days of August (Merlot) to the end of September (Cabernet Sauvignon) and early October (Sangiovese).
Fermentation temperature 28 °C (82 °F)
Vinification Fermentation took place separately for the three varieties in stainless steel vats at a controlled temperature of 28°C for 10 days. Post-fermentation maceration on the skins continued for a further 2 weeks.
Ageing After malolactic fermentation, the wine was aged for 12 months in first, second and third passage French oak barriques. Finally, after a short rest in steel tanks, the wine was bottled and further aged for at least 6 months.
