	Perlage Fine and persistent.
	Colour Pale straw yellow with greenish reflections.
	Bouquet Ample and fragrant, with hints of slightly unripe fruit such as pineapple, Calvilla apple and Decana del Comizio pear. It has flowery notes of citrus and acacia blossom, which blend with a slight balsamic sensation of Greek basil and biscuit that fades into vanilla.
	Flavour Defined and harmonious, combines the acidic vein with a consistent structure and a prolonged finish.

Vinification	Cooling, soft pressing of whole grapes. First fermentation in temperature-controlled steel tanks at 13-14°C. 20% of the Chardonnay ferments in French oak barrels. Each parcel is vinified separately to enhance the uniqueness of its profile.
Ageing	At least 30 months. The second fermentation occurs in May following the harvest.
