Climate	Protected by the Vosges, it is the driest region in France, with warmer summers than the national average.
Soil composition	Limestone, marl and clay.
Harvest	By hand. Grapes are selected when fully ripe.
Vinification	The grapes are brought to the winery, gently pressed and fermented in individual tanks with small additions of indigenous yeasts. Each vineyard has its fermentation tank and is vinified separately.
Ageing	Once fermentation is complete, usually after a couple of months, the wine is left to rest and then bottled within 11 months of the harvest. The bottles are then left to rest for a couple of years before marketing.

Pairing	It pairs well with spicy Asian cuisine.
