Climate	Altitude: 270-430 m. a.s.l. Exposure: North and different expositions according to the production area.
Soil composition	Marly-clayey and limestone.
Cultivation system	Guyot.
Harvest	By hand, between the second and third decade of August depending on weather conditions.
Vinification	Grapes are gently pressed after harvesting. The fermentation takes place at a controlled temperature with selected yeasts in stainless steel tank.
Ageing	The wine ages in stainless steel for about 7/8 months with repeated batonnages, before being bottled. The sparkling process is carried out with the Classic Method in the spring following the harvest. The wine then matures in the bottle on its lees for at least 48 months and is aged a few months after disgorgement before being marketed.
