Castel del Monte rosé is the most typical of the wines from this DOC region. Its uniqueness derives from the variety from which it is made, the Bombino Nero vine, cultivated exclusively in this geographical area. Rosé has always been Rivera's flagship wine, so much so that it was decided to identify its name with the company's trademark.

Pale cherry with purple reflections.

Bouquet

Rich and lively fruity bouquet with notes of cherry and strawberry.

Flavour

Crisp and refreshing on the palate with a full-bodied fruity note accompanied by elegance and pleasant acidity.

Pairing

Very pleasant as an apéritif. It is also a perfect companion for seafood starters, light soups and pasta dishes, baked fish, poultry and veal.

Origin	The Murgia hilly area northwest of Bari, in the Castel del Monte DOC region.
Climate	Altitude: 250-300 m. a.s.l. on rocky hills.
Yield per hectare	9,000-10,000 kg/hectare.
Harvest	The grapes are harvested at the end of September.
Vinification	After the must has been in contact with the skins for about 16-18 hours in stainless steel tanks, the first must is drained off without pressing, and fermentation continues for 9-10 days at 18-20°C.
Ageing	The wine is ready for bottling 3-4 months after vinification.
