||After maceration on the skins for five days, the grapes are pressed and the free-run juice goes through a process of enzymatic clarification. The fermentation temperature is kept at a maximum of 14 °C for about a month. After a first racking the wine is kept in batonnage for four months. The malolactic fermentation is blocked at 50% of the completion of the process.
