||Destemming, spontaneous fermentation and maceration for 8-14 days in oak truncated cone vats with 3-4 daily manual punching down.
||In oak barrels from 25 to 35 hl for 18 months.
||Excellent with blue cheeses, first courses based on fish and with white meats.
