Soil composition Terrain of volcanic nature, from ashes and pumice from fall, not calcareous, well drained and deep.
Cultivation system Simple horizontal espalier with spurred cordon pruning.
No. plants per hectare 5,000 vines per hectare.
Yield per hectare 1 kg per strain.
Harvest By hand, the second/third decade of October with small crates when grapes are fully ripe.
Vinification After a careful pre- and post-de-stemming selection, the pressed grapes ferment for 20-25 days at a temperature of 28-30°C.
Ageing 18-24 months in new oak barrels.
